Chef Tony’s Top Tips

We asked Lazy Daisy's owner and chef, Tony, to send us some of his Top Tips, here are his first 8! Look out for his next top tip plus some simple recipes using local ingredients!


1 always add a pinch of sugar when using tinned tomatoes, this helps to take away the acidity.
2 for buttery flaky shortcrust pastry, roll out the pastry between two sheets of baking paper
3 golden rule when making pastry is to handle it less, this stops it becoming rubbery and tough
4 the biggest difference between  professional and amateur cooking is the seasoning
5 a chef should never be without a lemon, this helps to heighten flavours
6 to live a long life, use less salt. To live a happy one, use more
7 always warm oranges and lemons first as this helps to get more juice out of them
8 when using spices, its better to buy whole and grind them in a mortar and pestle. This enhances the flavours immensely
